One of my new years resolutions (like most people) is to get back on the health and fitness wagon. At the moment I’m trying to only have carbs like oats, rice or sweet potato the meal after my exercise. So I’m always on the look out for low carb meal accompaniments for the days or meals I haven’t exercised.
Cauliflower is low in everything but can also be a bit bland, queue horrific school dinner memories of boiled cauliflower. It’s not easy having meals without carbs (ALL THE CARBS) but I think cauliflower rice is the next best thing. I'd describe it as a lighter cous cous and it is perfect for soaking up saucy meals.
If you would like to try cauliflower rice:
+Preheat the oven at 190 degrees C.
+Put a whole head of raw cauliflower into a blender and whizz until you have what looks like crumbed cous cous size pieces. Season well.
+Transfer the cauliflower parts into an oven proof tray and pop it in the oven for 30-40 minutes, turning the cauliflower with a fork every 10/15 minutes. It's important to keep the cauliflower as dry as possible whilst roasting so don't add any oil or sauce.
And voila. I’d recommend having this as a side to chili con carne or spag bol. You can also try adding different herbs to the cauliflower mix, a pinch of cinnamon and fresh thyme/rosemary goes down a treat!
