Pancake day (17th Feb) is seriously one of my favourite days of the year but I'm changing my approach this year. Having given up eating sugar in a bid to be healthier (I know, I know), my usually chocolate-filled, salted caramel and one-part-lemon-to-ten-parts-sugar toppings are out of the window. This is what I'll be trying instead...
Buckwheat pancakes from Le Boot Camp-
40g Buckwheat Flour
40g Gluten Free Flour
60ml coconut or almond milk
Le Boot Camp is a new book by French Body Coach, Valerie Orsoni which looks at nourishing the body, rather than starving it, to reach a healthy weight. Buckwheat is one of her star ingredients due to its high levels of protein, fibre, vitamins and minerals.
Whisk all of the ingredients together and spoon small portions into a hot pan, browning on both sides.
I'll be trying mine with a good quality maple syrup.
Vivianna's Vanilla Pancakes -
I ️ Love Vivianna does make up and am so looking forward to trying this vanilla pancake recipe she posted recently.
1 TSP Coconut Oil
1½ Cups Rice Flour
½ Cup Vanilla Protein
1 TSP Baking Powder
1½ Cups Unsweetened Almond Milk
While heating up the coconut oil, add all of the dry ingredients to a bowl, followed by the wet ingredients and leave the eggs until last. Whisk thoroughly until smooth and spoon small portions into the hot pan until browned. I'm going to have these with fresh berries.
Clean and Lean Pancakes -
Whenever I follow James Duigan's Clean and Lean programme, I feel AMAZING. I don't quite manage to fulfil the principles on a daily basis (I blame the office of feeders and the freezing temperatures) but think these pancakes will satisfy my sweet cravings.
100g · 3½ oz organic rolled oats
200g · 7oz ricotta or cottage cheese
4 medium eggs
1 tsp ground cinnamon
Shove all of the ingredients in a blender until they become a smooth batter. Transfer small portions to the hot frying pan and cook for 2-3 minutes on each side.
He recommends serving with blueberries and natural yoghurt. I'll probably add a sprinkle more cinnamon too as I can't get enough of the stuff.
